Okay. Maybe it’s not a completely authentic approach to a Caesar dressing, but it is good and it’s easy to make. We love this dressing!Although you can use anchovy paste or canned anchovies, I like the marinated anchovies that you can usually find beside the seafood counter at your market. Don’t use too much or it will taste fishy. But don’t leave them out or it won’t taste like Caesar dressing.
Place the garlic, anchovies, lemon juice, mustard, salt, pepper, and Worcestershire sauce in a small blender cup and blend until smooth. (You can also use an immersion blender.)
In a small bowl, mix together the mayonnaise, parmesan, and the anchovy slurry until well blended.
To Make without a Blender
Mince the garlic and anchovies very fine, then mash with the side of your knife until they form a paste. Put these into a bowl and add the lemon juice, mustard, Worcestershire, salt, and pepper. Stir to combine. Then add a little of the mayo and stir until smooth, then add the rest of the mayo. Finally, stir in the parmesan.
