I always cook more tuna than we can eat so I can make the leftovers into this fresh tun salad. While he hates tuna salad made with canned tuna, Michael loves this salad and now buys an extra half a pound of tuna so we will have leftovers. Full of crunchy veggies and fresh herbs, and dressed lightly with a mixture of mayo, mustard, lime juice, and spices, it is one more reason to buy fresh tuna whenever you can!Salmon is also great in this recipe. You can also make this using the canned salmon from Costco, which doesn’t have any of the bones and skin you often get in canned salmon that make it taste fishy. Remarkably, Michael like that as well!
