Creamy Broccoli Soup

Creamy, easy, and healthy, this blended soup is a snap toput together, especially if you buy a 3 lb. bag of broccoli florets at Costco!
- 2 lbs. broccoli florets
- 3/4 cup onion roughly chopped
- 4 cloves garlic peeled
- 1 tsp. dried thyme
- ¼ tsp. nutmeg
- 4 cups vegetable stock or chicken stock
- ¾ cup half and half
- Salt and pepper to taste
- Croutons optional
Place the broccoli florets, the onion, and garlic, thyme, and nutmeg in a large stockpot and cover with the stock.
Bring to a boil over high heat, then turn down the heat, cover, and continue to cook for about 10 minutes until the vegetables are soft but not mushy.
Blend in batches (or use an immersion blender). Rinse out your pot and return the blended soup to the pot.
Stir in the half and half and season to taste with salt and pepper. Reheat until hot and serve with croutons and/or crème fraiche if you like.
