Cranberry Orange Shrub with Rosemary Method 3

This shrub recipe uses a cold process. The ingredients are the same as the hot process recipe. Make them both and compare!

Equipment

  • Blender or food processor or knife
  • large clean jar with lid
  • spoon
  • Measuring cups
  • clean bottles or jar with lids
  • Funnel
  • sieve
  • cocktail sieve

Ingredients
  

  • 1 lb. fresh cranberries
  • 2 Mandarin oranges chopped
  • 2 sprigs fresh rosemary leaves only
  • 1 cinnamon stick
  • ¾ cup white or golden sugar
  • 2 cups filtered water
  • 1 ¼ cups cider vinegar
  • ¼ cup white balsamic vinegar

Instructions
 

  • Wash the cranberries and put them into a blender or food processor. Pulse to chop them. Transfer to a large clean jar. (If you don’t have either, just chop them up with a knife.)
  • Pulse the oranges in a food processor or blender or chop them up whole with a knife. Transfer to the jar.
  • Add the sugar, oranges, rosemary, and cinnamon and mix well with a spoon, then stir in the water. Cover and set aside for 2-3 days.
  • After 2-3 days, strain the mixture into a large bowl, pressing gently to express as much juice as possible without pushing the fruit through the sieve.
  • Add vinegar(s) and stir.
  • Bottle it: pour over a cocktail sieve placed in a funnel to remove more of the sediment. Cover and refrigerate. You can use it now, but it is recommended that you wait a few days for the flavors to marry and get happy.
