Wash the cranberries and put them into a blender or food processor. Pulse to chop them. Transfer to a large clean jar. (If you don’t have either, just chop them up with a knife.)
Pulse the oranges in a food processor or blender or chop them up whole with a knife. Transfer to the jar.
Add the sugar, oranges, rosemary, and cinnamon and mix well with a spoon, then stir in the water. Cover and set aside for 2-3 days.
After 2-3 days, strain the mixture into a large bowl, pressing gently to express as much juice as possible without pushing the fruit through the sieve.
Add vinegar(s) and stir.
Bottle it: pour over a cocktail sieve placed in a funnel to remove more of the sediment. Cover and refrigerate. You can use it now, but it is recommended that you wait a few days for the flavors to marry and get happy.
