I have been making this fresh salsa made of black beans, corn, and fresh veggies for years. Maybe you have too. I love the freshness and how easy it is to make. Make it with or without cilantro and with or without jalapeños. Add more lime or more cumin or salt and pepper; use honey instead of sugar if you like.
Make it once and you’ll be hooked!

Ingredients
  

  • 1 can black beans rinsed
  • 2 c frozen white corn steamed in the microwave for 2-3 minutes
  • ½ c red onion finely chopped
  • ½ c red pepper finely chopped
  • 1 ½ c chopped fresh tomatoes
  • Small handful of cilantro washed and finely chopped (optional)
  • 2 T fresh jalapeño finely chopped (optional)
  • 1 t cumin
  • ½ t freshly ground pepper
  • ¼ t kosher salt
  • ¼ t sugar
  • 1/4 c freshly squeezed lime juice
  • Drizzle of olive oil

Instructions
 

  • Prepare all the vegetables and place in a large bowl.
  • Sprinkle with salt, pepper, cumin, and sugar.
  • Squeeze over the lime juice and drizzle with olive oilnand toss.
  • Taste; adjust seasonings to taste.
