BBQ Shrimp Bowl with Brown Rice

This BBQ shrimp bowl is quick and easy, especially if you sauté the shrimp in a skillet on the stove and use store-bought BBQ sauce. If you have a little more time, you can skewer the shrimp and cook them on the grill and make your own BBQ sauce with this recipe. Build the bowls with brown rice, veggies, shrimp, barbecue sauce, and crumbled feta.

Ingredients
  

Ingredients for the Shrimp

  • 1 lb. shrimp peeled and deveined
  • 1 T olive oil
  • 2-3 cloves garlic minced
  • ½ t red pepper flakes
  • ¼ t black pepper
  • ½ t smoked paprika

Ingredients for the Bowl

  • 1 cup brown rice
  • Romaine lettuce chopped
  • Tomatoes chopped
  • Red onion thinly sliced
  • Red yellow, orange, or green pepper, roughly chopped
  • Avocado chopped
  • Lime wedges
  • BBQ Sauce
  • Feta cheese

Instructions
 

  • Measure, rinse, and cook the rice according to instructions.
  • Peel and devein the shrimp.
  • Mis en place the salad vegetables. Chop the lettuce, tomatoes, peppers, and avocado. Thinly slice the onion and cut the lime into wedges.
  • Heat a skillet over medium heat. Add the oil and when it shimmers, drop in the shrimp and the garlic, and sprinkle on the spices. Cook for 2 minutes, then turn the shrimp over with a fork and cook for another minute or so. Remove from the heat.
  • Build the bowls. Put rice in the bottom of each bowl, then top with the veggies. Squeeze the lime over the veggies and then add the shrimp. Dress with BBQ sauce and crumbled feta.
