Cranberry Orange Shrub with Rosemary: Method 3
This Cranberry Orange Shrub is made using a cold process method, chopping up the cranberries to help to release their juices.
Overview
I wanted to make the same recipe using two different methods so I could compare the flavors. This recipe uses the same ingredients as a previous recipe, but is made with a cold process over several days. The cranberries are pulsed in a blender before shrubbing to get the juices flowing.
Ingredients
1 lb. fresh cranberries
2 cups filtered water
1 cinnamon stick
¾ cup white or golden sugar
2 Mandarin oranges, chopped
1 ¼ cups cider vinegar
2 sprigs fresh rosemary, leaves only
¼ cup white balsamic vinegar
Instructions
Step 1
Wash the cranberries and put them into a blender or food processor. Pulse to chop them. Transfer to a large clean jar. (If you don’t have either, just chop them up with a knife.)
Step 2
Pulse the oranges in a food processor or blender (or if you don’t have either, just chop them up whole). Add to the jar.
Step 3
Add the sugar, oranges, rosemary, and cinnamon and mix well with a spoon
Step 4
Stir in the water, then cover tightly and set aside for 2-5 hours.
Step 5
After 2-3 days, strain the mixture into a large bowl, pressing gently to express as much juice as possible without pushing the fruit through the sieve.
Step 6
Add an equal amount of cider vinegar and about ¼ cup of white balsamic and stir.
Step 7
Bottle it: pour over a cocktail sieve placed in a funnel to remove more of the sediment. Cover and refrigerate. You can use it now, but it is recommended that you wait a few days for the flavors to marry and get happy.
