Peach, Tomato, & Avocado Salsa
Peaches, tomatoes, and avocados are a winning flavor combination for a fresh salsa that is easy to make and ready to eat right away. Add red onions and thinly sliced jalapeños for a little crunch and heat. Lime juice adds brightness and acidity. Play around with this recipe by adding mint instead of cilantro or using white wine vinegar along with the lime. I also am known to drizzle a little honey in there…
This is another fresh salsa that is so easy to make and easy to adjust to your liking. Adjust the heat up or down with chilis and cayenne. Use parsley instead of cilantro if you don’t like cilantro, or leave it out altogether.
Ingredients
2 ripe peaches, diced
½ – 1 jalapeño, seeded and thinly sliced
1 medium tomato, diced
Juice of one lime
1 avocado, diced
Handful of cilantro, leaves and small stems chopped
½ medium red onion, thinly sliced into strips
½ t cumin
½ red pepper thinly sliced
½ t smoked paprika
Salt and pepper to taste as you like
Options: mint instead of cilantro and leave out; add honey; add a little white wine vinegar; mince the jalapeño instead of slicing it; leave the jalapeño out if you’re heat averse.
Instructions
Step 1
Slice and dice everything and put in a large bowl.
Step 2
Sprinkle on the seasonings, add the lime juice, and allow to sit for several minutes to meld before serving.
