Cowboy Caviar

I have been making this fresh salsa made of black beans, corn, and fresh veggies for years. Maybe you have too. I love the freshness and how easy it is to make. Make it with or without cilantro and with or without jalapeños. Add more lime or more cumin or salt and pepper; use honey instead of sugar if you like. Make it once and you’ll be hooked!

In the summer when corn is fresh, I like to use roasted corn I cut off the cob. Otherwise, I use frozen white corn zapped for a few minutes in the microwave.

Eat Cowboy Caviar with tortilla chips, of course! But also try it over Mexican dishes like quesadillas and burritos. It’s a great topping for eggs, and excellent atop a bed of lettuce with or without crushed tortilla chips and a little jalapeño ranch.

Ingredients

1 can black beans, rinsed

2 T fresh jalapeño, finely chopped (optional)

2 c frozen white corn, steamed in the microwave for 2-3 minutes

1 t cumin (or more if you like)

½ c red onion, finely chopped

½ t freshly ground pepper

½ c red pepper, finely chopped

¼ t kosher salt

1 ½ c chopped fresh tomatoes

¼ t sugar

Small handful of cilantro, washed and finely chopped (optional)

1/4 c freshly squeezed lime juice

Drizzle of olive oil

Instructions

Step 1

Prepare all the vegetables and place in a large bowl. Sprinkle with salt, pepper, cumin, and sugar. Squeeze over the lime juice and drizzle with olive oil. Toss. Taste and adjust seasonings to taste.
