Fresh Tuna (or Salmon) Salad

I always cook more tuna than we can eat so I can make the leftovers into this fresh tun salad. While he hates tuna salad made with canned tuna, Michael loves this salad and now buys an extra half a pound of tuna so we will have leftovers. Full of crunchy veggies and fresh herbs, and dressed lightly with a mixture of mayo, mustard, lime juice, and spices, it is one more reason to buy fresh tuna whenever you can!

Salmon is also great in this recipe. You can also make this using the canned salmon from Costco, which doesn’t have any of the bones and skin you often get in canned salmon that make it taste fishy. Remarkably, Michael like that as well!

Chopped Seared Tuna Salad

Chopped tuna, veggies, mayo, mustard, and spices. Quick and easy to make with leftover grilled tuna or salmon.

Ingredients

Seared tuna, cut into small chunks OR grilled salmon, broken into small pieces

2 T good mayonnaise (Dukes or Hellmann’s)

½ onion, sweet or red, minced

1-2 t Dijon mustard

½ pepper, sweet, red, green, yellow, and/or poblano, small dice

1 t smoked paprika

¼ c fresh chopped parsley (or 1 T dried)

¼ t cayenne

1 T fresh basil or dill or 2 t dried

Salt and pepper to taste

2 T fresh lime juice or lemon juice (use bottled if you don’t have fresh)

Optional: Chopped fresh chives or green onions

Instructions

Step 1

Chop the tuna, dice the veggies and the herbs, and toss together into a medium-sized bowl.

Step 2

Put the mayo, mustard, lime juice, paprika, cayenne, and a little salt and pepper into a small bowl and stir to combine. Pour over the tuna and veggies; toss to coat.

Step 3

Taste and adjust seasoning. Refrigerate until ready to serve.
