Tahini-Lime Dressing
With its Asian flavors, this dressing is perfect on salads with bright veggies like shredded carrots, thinly sliced radishes, and cucumbers. To really brighten the flavors, consider marinating these veggies in a little lime juice, vinegar, and salt and pepper before constructing your salad. It’s a nice combination.
This dressing is easily made without a blender. Just a bowl and a whisk…I made it this time with powdered ginger because I didn’t have fresh. AND as an added bonus, I show you why it’s important to taste as you go…I left out the soy sauce and had to add it at the end! Taste your food, chefs!
Ingredients
⅓ cup tahini
1 T honey
¼ cup fresh lime juice
2 garlic cloves, minced
¼ cup olive oil + 2 T sesame oil
A few dashes of hot sauce
2 T soy sauce or tamari
Water as needed to desired consistency
1 T minced or grated fresh ginger
Instructions
In a small bowl, combine the tahini, lime juice, sesame oil, soy sauce, honey, garlic and hot sauce and whisk until smooth. If needed, add water a tablespoon at a time to reach the desired consistency. Taste and adjust honey, hot sauce, and lime.
