Creamy Broccoli Soup
Creamy, easy, and healthy, this blended soup is a snap to put together, especially if you buy a 2 lb. bag of broccoli florets at Costco! If you can’t find bags of fresh broccoli florets, use fresh broccoli from the produce section. Just wash it, trim the ends, and chop it up, stems and all. Overview
If you use fresh brocolli, just trim the ends and chop it all up, stems and all. If you can find bags of broccoli florets, even easier!
Ingredients
2 lbs. broccoli florets or fresh broccoli
4 cups vegetable stock or chicken stock
3/4 cup onion, roughly chopped
¾ cup half and half
4 cloves garlic, peeled
Salt and pepper to taste
1 tsp. dried thyme
Croutons (optional)
½ tsp. nutmeg
Instructions
Step 1
Place the broccoli florets, the onion, the garlic, thyme, and nutmeg in a large stockpot and cover with the stock.
Step 2
Bring to a boil over high heat, then turn down the heat, cover, and continue to cook for about 10 minutes until the vegetables are soft but not mushy.

Step 3
Blend in batches (or use an immersion blender). Rinse out your pot and return the blended soup to the pot.
Step 4
Stir in the half and half and season to taste with salt and pepper. Reheat until hot but don’t boil.
Step 5
Serve with croutons, shredded cheddar, and/or crème fraiche as you like.
