Cranberry Apple Shrub: Method 2
This Cranberry Apple Shrub is made using a cold process method, but the cranberries are baked prior to mixing ingredients together to help to release their juices.
Overview
This method of making a cranberry shrub relies on baking the cranberries to release their juices. I found that, like the hot process, it was very difficult to strain the fruit without getting a lot of sediment into the shrub. Good flavors though!
Ingredients
1 lb. fresh cranberries
2 T honey
1 T black peppercorns
2 bay leaves
Pinch of salt
1 cup sugar
2 apples, peeled and chopped or grated
1 pint water
2 mandarin oranges, chopped or pulsed in the blender
Cider vinegar
3 star anise pods
White balsamic vinegar
Instructions
Step 1
Preheat the oven to 350°. Wash the cranberries and then spread them on a parchment-lined baking pan, drizzle with the honey, and sprinkle with a bit of salt. Bake for 15 minutes.
Step 2
Transfer to a large, clean jar and add the apples, oranges, spices, sugar, and water. Stir for a few minutes to blend everything, then cover and set aside for 2-3 days, stopping by to shake the jar whenever you think about it.
Step 3
After 2-3 days, strain the mixture into a large bowl, pressing very gently to express as much juice as possible without pushing the fruit through the sieve.
Step 4
Add vinegar(s) and stir.
Step 5
Strain into a bottle and store in the fridge.

Equipment
- Baking pan
- Parchment paper
- Large jar with lid
- Measuring cups
- Knife or grater
- Knife or food processor
- Large sieve
- Small cocktail sieve
- Bottle or jar with tight-fitting lid
