Simple Vinaigrette
The basic formula for a vinaigrette is three parts oil to one part acid (which can be either vinegar or citrus), and salt and pepper. To that, you can add any number of things.
This vinaigrette is the one I use for my Salad Niçoise. It is a perfect balance for that salad which includes potatoes, eggs, and tuna.
Makes about 1 cup
Some like oregano in their vinaigrette. I’m a fan of thyme.
Ingredients
2 t Dijon mustard
Salt and pepper to taste
½ t minced garlic
¼ c Champagne or white wine vinegar
½ t thyme
¾ cup extra-virgin olive oil
Instructions
In a small bowl, whisk together all the ingredients except the oil. Add the oil in a thin stream, whisking constantly to incorporate.
I also am known to throw everything in a small blender cup and whiz it until emulsified.
